School Fete Caramel Tart

This Tennis Biscuit no bake base, caramel and whipped cream topped tart takes me right back to being a kid at school fetes. I’ve been making variations ever since - if you add sliced banana it becomes Banoffee pie which is wonderful too. The traditional South African version of this tart has grated Peppermint Crisp chocolate in it too, I find this makes it a little too sweet. Instead I add 4 drops of peppermint essence to the cream which gives the dessert a wonderful secret freshness. If you want to be an over achiever and make this tart taste even more delish you can boil a can of condensed milk for a few hours and make your own caramel, infinitely better than the ready made one. Here’s a method for making your own caramel if you fancy.

Ingredients

  • 1 packet of Tennis Biscuits, crushed

  • 150g of butter

  • 350 ml of fresh whipping cream

  • 1 can of Nestle Caramel Treat

  • 4 drops of peppermint essence for the whipped cream (optional).

  • fresh mint to garnish

Instructions

  1. Put the contents of a packet of Tennis Biscuits into a packet and crush them (kids love to help by jumping on the bag till all the biscuits are crushed.)

  2. In a medium sized pot melt the butter and add the crushed biscuits. Combine them well.

  3. Place the warm butter and biscuit mixture into the dish you want to serve the tart in. Press down well and place into the fridge or freezer until it’s a nice hard base.

  4. Spread the can of caramel evenly over the biscuit base

  5. Whip the cream into stiff peaks and add the peppermint essence if you fancy. Cover the caramel with whipped cream.

  6. Garnish with a sprig of mint. Keep in the fridge till you’re ready to serve.
